Salmon Fish Cakes with Chives & Red Pepper

serves 1 - 3 time 30 - 60mins |

|
15 g butter |
1 onion, finely chopped |
400 g salmon, minced or chopped |
½ red pepper finely chopped |
50 g cream cheese, softened |
100 g fresh breadcrumbs |
2 tbsp chopped fresh chives |
½ tsp paprika |
1 tbsp garlic powder (optional) |
Plain flour, for coating |
Sunflower oil, for shallow frying |
Cooking Method
1. Melt the butter and saute the onion and pepper
for 3 to 5 minutes. Allow to cool then stir in the
minced fish, cream cheese, breadcrumbs, chives,
paprika and garlic. Mix together well. |

2. Form the mixture into 4 patties, toss in a little
flour to coat, and refrigerate until firm. |

3. Heat a little oil in a frying pan and cook the
salmon cakes for about 8 to 10 minutes, turning once
until golden and cooked through. |

4. Place onto kitchen towel to soak up any excess
oil. Serve immediately. |

wedges, salad, creamy caper sauce and a slice of
lemon.] |
