Smoked Salmon Pate on Bagel Toast

serves 2 - 4 time 30 mins |

3 Bagels |
2 tbsp olive oil |
125 g (4 oz) smoked salmon |
150 g (5oz) light cream cheese |
½ lemon, juiced, rind pared and shredded |
freshly ground black pepper |
small bunch washed watercress |
Cooking Method
1. Cut each bagel into 4 thin slices. Brush each
with olive oil and bake at 200 0C, 400 0F, Gas 6 for
5 to 6 minutes until golden and crisp. Allow to
cool. |

2. Mash the salmon, cream cheese and lemon juice
together with a little black pepper. |

3. Pile onto the bagel crisps and sprinkle with
lemon rind and watercress.. |
